On March 2, Jason Zygmont and his acclaimed Setsun East pop-up restaurant team cooked what was billed as a “one-night takeover” at Vandyke Bed & Beverage, the liquor-themed hotel in East Nashville's Five Points. The dinner went well, with folks strolling over for Zygmont’s ricotta agnolotti and oysters. But then, well, you know what happened as March 2 ticked over into March 3 — a deadly tornado struck the neighborhood.
Setsun has essentially been shut down since that night. In 2019 chef-owner Zygmont, who previously was at the helm at The Treehouse, started offering his pop-up dinners four nights a week at Sky Blue Cafe. The small wine dinners — there was no liquor license — with Zygmont’s agnolotti regularly sold out and were on list after list, including in the Scene’s Best of Nashville issue, as Best Tasting Menu.
Post-tornado and post-COVID shutdowns, Zygmont is ready to reopen, now with a permanent location — and breakfast and lunch, too. Setsun will now be the food & beverage operator at the small Vandyke hotel. Vandyke will still offer its great cocktail program (the hotel rooms are themed after different liquors, after all), and Zygmont and his team will handle the wine list and the food. Opening day — barring any new acts of God or pandemic — is June 18.
The new partnership allows Setsun to expand beyond its dinners with homemade bagels (he’s been selling those to go during quarantine), breakfast sandwiches, egg drop soup, salads, waffles and a full espresso program at what he is describing as an all-day cafe. He’ll be able to build on the dinner following that Setsun had at the pop-up, with the same emphasis on natural wines. Saturday and Sunday brunch are likely to be popular. The dinner menu will feel familiar to pop-up fans. “We are trying to bring in as much business possible, given the unknowns,” Zymont says.
Specifics will change as the reopening roadmap phases allow for more people inside. Eventually, reservations will be accepted for the inside tables, while drinking and dining at the bar and first-floor outdoor space will be walk-up (access to the patio is through the dining room). In the past, the Vandyke hasn’t had room service for its hotel guests, so Zygmont is looking at ways that can be offered (the hotel has just eight rooms), as well as serving food on the rooftop patio and maybe some in-room private events (some guest rooms have dining space). Setsun will also be the hotel’s caterer for private events.
“It feels like a solid natural evolution,” Zygmont says. “The entire time we were operating at Sky Blue, the intention was to grow up.”
Zygmont is in the process of hiring — and is receiving more than 30 résumés a day, he says — and is excited about the caliber of applicants. “We have some really solid people coming in. I am ready to be open and cooking.”
