It isn’t an easy time for restaurant openings, but Waverly is bound to be a welcome addition to the coastal neighborhood of Cardiff, and North County as a whole.

Replacing Rimel’s, the relaxed new eatery is a distinct change of pace for local hospitality group, SDCM, which runs the nightlife-centered Kettner Exchange, Firehouse, Vin de Syrah, and The Grass Skirt. It’s also the first concept that the group is potentially planning to open in different areas.

Debuting this Wednesday, October 14, and operating from 9 a.m. to 10 p.m. seven days a week, Waverly allows its award-winning chef Brian Redzikowski to apply his skills to an all-day menu that will evolve with the seasons, starting with breakfast, which includes a fried egg sandwich on brioche, poached eggs on quinoa salad, eggs Benedict with king crab, and mango chia pudding. Lunch features a Baja rice bowl, pork belly bao, and ricotta agnolotti while dinner shifts into lobster ceviche, beef tenderloin toast, seabass en papillote, and a 40-ounce bone-in ribeye. The cocktail program is also tailored for day and evening, with early session drinks ranging from The Waverly with gin, blueberry oat milk, citrus, nutmeg, and cardamon to the Dirty Verde with tequila blanco, Ancho Verde, lime, cucumber, and paprika and sundown sippers that include an Old Fashioned with macadamia and mole and a draft cocktail that blends absinthe, Galliano, and rootbeer .

The soothing and stylish space, by Encinitas firm Design 4 Corners, has indoor and outdoor seating for 55 under the current restrictions, but will eventually be able to seat 80 diners.
