HENDERSON, Ky. – When you love chicken, you love chicken.

Bryson Hatchett loves chicken.

He and wife Tirita are the owners of the new Trappin Chick’n truck in Henderson, where the menu is full of — you guessed it.

Bone-in wings, boneless wings, strips, sliders, chicken and waffles, quesadillas, nachos, loaded baked potatoes, all with chicken.

The Hatchetts first started cooking their favorite dishes for friends at home a few years ago.

“It was always chicken though,” said Bryson. “I really can eat it every day, and I know everybody else loves it. I look at a menu, and I can feel steaks and burgers, but I’m gonna go ahead and go for the strips or wings regardless.”

Friends enjoyed Bryson’s special recipes so much the couple provided food to-go on weekends, game days and such for a couple years, until Tirita put her foot down.

“I finally said 'Enough, we have got to get out of this house,'” she said. “We were going around looking at buildings, but everything was kind of pricey, so I said, ‘This is what we’re gonna do. We’re gonna save up enough money and get a truck.’”

They found just the right one down the road in Morganfield, Kentucky, and Trappin Chick’n hit the road in June.

If you like wings and strips, these are some you’ll want to try. The bone-in wings are jumbo and are fried naked until crisp. Both the strips and boneless wings are made with chicken tenderloin, hand-breaded, tender and juicy, and tossed in the sauce of your choice.

There are many sauces to choose from, and most are whipped up right in the truck.

The Nashville Hot is possibly the most popular. It’s seasoned with a smoky-sweet flavor and is excellent on any of the breaded chicken options or the bone-in wings. The garlic parmesan, sweet-spicy honey garlic and Kentucky Sweet Heat barbecue are all the Hatchett’s recipes.

You may stick to the classics with regular or hot Buffalo-style sauce or lemon pepper, and there is also a Grippo’s wet sauce and sometimes a dry Grippo’s rub. Jamaican Jerk sauce is an occasional special.

The Nashville Hot sliders are made with half a big chicken strip on a griddle-toasted sweet Hawaiian bun with pickle slices and a drizzle of mayo. If you like, substitute any other sauce for the Nashville style.

The Hatchetts report that many repeat customers are running down the list of sauces, trying a different one every time they visit the truck. Even the chicken griddled inside the quesadillas can be tossed with a flavorful sauce.

Trappin Chick’n also offers homemade desserts. Bryson’s brother Canaan Hatchett is a talented chess pie baker and the truck carries his creations in lemon, strawberry and chocolate flavors by the slice or as a whole pie. Tirita also makes apple dumplings in croissant dough and a creation called a Beat-It Cake, a light cake topped with strawberries, Butterfinger pieces and caramel sauce.
